Seared Scallops with Jalapeno Bacon Cream Sauce

Seared Scallops with Jalapeno Bacon Cream Sauce
INGREDIENTS:
Serves: 2
- half a pound of scallops
Cream Sauce:
- 2 tbsp butter
- 1 cup of heavy cream
- 1 teaspoon flour
- 1 tbsp bacon crumbles
- salt and pepper to taste
- 2 roasted jalapenos chopped and muddled
- 1 cup whole milk
DIRECTIONS:
- Dry scallops thoroughly. Put olive oil in a cast iron pan and sear both sides of scallops.
- Prepare cream sauce. In a pan, put bacon and roasted jalapenos with olive oil. Cook for about 3 minutes.
- Add heavy cream, butter, whole milk, and flour to bacon and jalapeno cream sauce mixture.
- Pour cream mixture over finished seared scallops. Sprinkle extra bacon crumbles on top of scallops if desired.
THE PERFECT PAIR:
Scallops, like most fishes, call for white wines. This recipe has a butter base for the cream, so you may want to stay away from Chardonnays.
